I. Love. Oatmeal.
In college I lived off of instant oatmeal smothered with the biggest glob of peanut butter.
Yeah. That was dinner.
Oatmeal is basically a vessel for delicious toppings.
You really can put pretty much anything on oatmeal.
Like fruit, yogurt, nuts, nut butter, coconut, spices, sugar (of course), eggs (gasp!), cheese and herbs.
Yes savory oatmeal is super tasty and not gross at all. Surprise!
But today we’re going the sweet route.
Because I do have a sweet tooth, after all.
And since it’s summer we’re going the cold route.
You’ve probably heard of overnight oats by now. I mean, the stuff is all over the Internet.
Makes sense because it’s quick, easy, healthy and yummy.
Okay it’s hard to beat a fresh bowl of hot oatmeal, but sometimes you don’t want to cook and sometimes you don’t want to eat a piping hot bowl of food.
In case you live under a rock and are still a bit baffled by overnight oats, all you got to do is stir some oats with some liquid, let it sit overnight in the fridge while you get your beauty rest, then dig your spoon in there and eat up!
Except you have to add actual flavor or this scenario would be very underwhelming in the taste department.
Hearty oats are mixed with almond milk, tangy kefir, plump chia seeds, sweet maple syrup, fragrant vanilla, and warm cinnamon then topped with nutty almond butter and juicy blueberries for a breakfast treat.
P.S. Instant oatmeal topped with peanut butter really is fantastic, don’t get me wrong.
P.P.S. If you want your overnight oats a bit thicker, only use 1/3 cup milk.
P.P.P.S. If you’re using almond milk, make sure it’s the original flavor and unsweetened, since you add vanilla extract and maple syrup for sweetness. Too much sugar is a bad thing!
