Ingredients

shelled edamame (soybeans)

grated carrots

roughly chopped snap peas

diced English cucumber
1 to 2
tablespoons
pickled sushi ginger (I use The Ginger People jarred organic pickled sushi ginger)

teaspoon
pickled sushi ginger liquid
1/2
teaspoon
sesame salt (I use Eden Foods Gomasio), or to taste
Cubed avocado, optional; for topping
Thinly sliced scallions, optional; for topping
Instructions
Gently toss all the ingredients until well combined.
Top with avocado and scallions if you wish.
