Ingredients

cup
old fashioned rolled oats, lightly toasted in a skillet
3/4
teaspoon
ground cinnamon
1 1/4
cups
unsweetened unflavored oat milk (or toasted coconut almond milk blend), plus more for serving
1/3
cup
finely grated zucchini
1-2
tablespoon
pure maple syrup, or to taste
1/2
teaspoon
pure vanilla extract
Pink sea salt, to taste
Toasted walnut pieces, for topping
Nut butter, for topping (optional)
Fruit, for topping (optional)
Instructions
Stir all of the ingredients together (except the walnuts, nut butter, and fruit) until well combined.
Cover and refrigerate for at least 4 hours or overnight.
Stir, then taste and adjust the ingredient amounts to your liking, adding a splash of milk if needed.
Top with walnuts, nut butter, and fruit, if you wish.
