Ingredients

cooked firm lentils (I use Trader Joe's ready to eat steamed lentils—in the refrigerated section)
1/2
medium-large
juicy navel orange, sectioned
1/3
medium-large
avocado; cubed
1
packed heaping cup
arugula
1
teaspoon
fresh lemon juice, or to taste
Freshly cracked black pepper, to taste
Pink sea salt, to taste
Instructions
Gently toss the lentils, orange, and avocado together.
Fold in the arugula.
Season with lemon juice, pepper, and salt.
