Balsamic Peach & Corn Salad with Arugula & Avocado

Ingredients
  

  • 3 lightly packed cups arugula
  • 1 cup fresh raw corn kernels, scraped off the cob
  • 1 cup diced peach (about 1 medium peach)
  • 1 cup diced avocado (about 1/2 medium-large avocado)
  • 2 tablespoons toasted sliced almonds
  • 2 teaspoons high-quality balsamic vinegar
  • Pink sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions
 

  • Gently toss all of the ingredients together until combined, being sure to include as much peach and corn juice as possible. Taste and adjust ingredient amounts accordingly.
