1/2cupmashed very ripe banana (1 medium-large banana)
3/4cupunsweetened unflavored oat milk (I like Silk and Oatly original)
2tablespoonsalted natural peanut butter (no added oil or sugar)
1tablespoonpure maple syrup
3/4teaspoonpure vanilla extract
1 1/2teaspoonsflaxseed meal
1cuprolled oats
3/4teaspoonground cinnamon
1/2teaspoonbaking powder
1/8teaspoonpink sea salt
2tablespoonsroughy chopped dark chocolate (I use 70% cacao bar)
Toppings:
Sliced banana
Peanut butter, for drizzling
Melted dark chocolate, for drizzling
Salted peanut halves
Instructions
Heat oven to 375. Grease two 5 1/2-inch diameter (length across) oven-safe bowls with coconut oil.
In a medium sized bowl mix the mashed banana, milk, peanut butter, maple syrup, vanilla and flaxseed meal until thoroughly combined. Let the mixture sit for 5 minutes.
Stir in the oats, cinnamon, baking powder and salt until well combined. Fold in the chocolate chunks.
Divide the mixture between the two greased bowls then bake for 30 minutes or until the center no longer looks wet. Don't overbake.
After removing from the oven, let the oatmeal rest for 5 minutes.
Top with banana slices, peanut butter, melted chocolate and peanuts.
