Baked Vegan Peanut Butter Banana Chocolate Chunk Oatmeal

Ingredients
  

Baked Oatmeal:

  • Unrefined coconut oil, for greasing pans
  • 1/2 cup mashed very ripe banana (1 medium-large banana)
  • 3/4 cup unsweetened unflavored oat milk (I like Silk and Oatly original)
  • 2 tablespoon salted natural peanut butter (no added oil or sugar)
  • 1 tablespoon pure maple syrup
  • 3/4 teaspoon pure vanilla extract
  • 1 1/2 teaspoons flaxseed meal
  • 1 cup rolled oats
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon pink sea salt
  • 2 tablespoons roughy chopped dark chocolate (I use 70% cacao bar)

Toppings:

  • Sliced banana
  • Peanut butter, for drizzling
  • Melted dark chocolate, for drizzling
  • Salted peanut halves

Instructions
 

  • Heat oven to 375. Grease two 5 1/2-inch diameter (length across) oven-safe bowls with coconut oil.
  • In a medium sized bowl mix the mashed banana, milk, peanut butter, maple syrup, vanilla and flaxseed meal until thoroughly combined. Let the mixture sit for 5 minutes.
  • Stir in the oats, cinnamon, baking powder and salt until well combined. Fold in the chocolate chunks.
  • Divide the mixture between the two greased bowls then bake for 30 minutes or until the center no longer looks wet. Don't overbake.
  • After removing from the oven, let the oatmeal rest for 5 minutes.
  • Top with banana slices, peanut butter, melted chocolate and peanuts.
