Easy Vegan Tostadas

Ingredients
  

  • 3 tostadas (I use Guerrero brand)
  • 1 cup vegan refried beans (I used Trader Joe's Refried Black Beans with Jalapeno)
  • 1/2 cup roughly chopped tomato (I used cherry tomatoes)
  • 1/2 teaspoon fresh lime juice
  • 1 tablespoon roughly chopped fresh cilantro
  • Pink sea salt, to taste
  • 1/2 avocado, sliced
  • 1 cup finely shredded green cabbage
  • 3 tablespoons crumbled vegan feta (I use Trader Joe's)
  • Hot sauce, to taste (I use Aardvark Habanero Hot Sauce)
  • Cilantro, for topping
  • Lime wedges, for serving

Instructions
 

  • Heat oven to 400. Place the tostadas on a metal baking sheet and toast for 4 to 5 minutes, or until hot and fragrant.
  • Meanwhile, heat the beans in a small pot until hot, stirring occasionally.
  • For the salsa, stir together the tomatoes, lime, cilantro and salt, to taste.
  • Remove the toasted tostadas from the oven and carefully spread the refried beans on top of each.
  • Next top the tostadas with the avocado, salsa, cabbage, cheese, hot sauce and cilantro. Serve with lime wedges.
