Baked Vegan Peanut Butter Banana Chocolate Chunk Oatmeal

Ingredients
  

Baked Oatmeal:
  • Unrefined coconut oil, for greasing pans
  • 1/2 cup mashed very ripe banana (1 medium-large banana)
  • 3/4 cup unsweetened unflavored oat milk (I like Silk and Oatly original)
  • 2 tablespoon salted natural peanut butter (no added oil or sugar)
  • 1 tablespoon pure maple syrup
  • 3/4 teaspoon pure vanilla extract
  • 1 1/2 teaspoons flaxseed meal
  • 1 cup rolled oats
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon pink sea salt
  • 2 tablespoons roughy chopped dark chocolate (I use 70% cacao bar)
Toppings:
  • Sliced banana
  • Peanut butter, for drizzling
  • Melted dark chocolate, for drizzling
  • Salted peanut halves

Method
 

  1. Heat oven to 375. Grease two 5 1/2-inch diameter (length across) oven-safe bowls with coconut oil.
  2. In a medium sized bowl mix the mashed banana, milk, peanut butter, maple syrup, vanilla and flaxseed meal until thoroughly combined. Let the mixture sit for 5 minutes.
  3. Stir in the oats, cinnamon, baking powder and salt until well combined. Fold in the chocolate chunks.
  4. Divide the mixture between the two greased bowls then bake for 30 minutes or until the center no longer looks wet. Don't overbake.
  5. After removing from the oven, let the oatmeal rest for 5 minutes.
  6. Top with banana slices, peanut butter, melted chocolate and peanuts.
