Balsamic Peach & Corn Salad with Arugula & Avocado

Ingredients
  

  • 3 lightly packed cups arugula
  • 1 cup fresh raw corn kernels, scraped off the cob
  • 1 cup diced peach (about 1 medium peach)
  • 1 cup diced avocado (about 1/2 medium-large avocado)
  • 2 tablespoons toasted sliced almonds
  • 2 teaspoons high-quality balsamic vinegar
  • Pink sea salt, to taste
  • Freshly cracked black pepper, to taste

Method
 

  1. Gently toss all of the ingredients together until combined, being sure to include as much peach and corn juice as possible. Taste and adjust ingredient amounts accordingly.
