Citrusy Lentil Arugula Salad

Ingredients
  

  • 1/2 cup cooked firm lentils (I use Trader Joe's ready to eat steamed lentils—in the refrigerated section)
  • 1/2 medium-large juicy navel orange, sectioned
  • 1/3 medium-large avocado; cubed
  • 1 packed heaping cup arugula
  • 1 teaspoon fresh lemon juice, or to taste
  • Freshly cracked black pepper, to taste
  • Pink sea salt, to taste

Method
 

  1. Gently toss the lentils, orange, and avocado together.
  2. Fold in the arugula.
  3. Season with lemon juice, pepper, and salt.
