Easy Vegan Tostadas

Ingredients
  

  • 3 tostadas (I use Guerrero brand)
  • 1 cup vegan refried beans (I used Trader Joe's Refried Black Beans with Jalapeno)
  • 1/2 cup roughly chopped tomato (I used cherry tomatoes)
  • 1/2 teaspoon fresh lime juice
  • 1 tablespoon roughly chopped fresh cilantro
  • Pink sea salt, to taste
  • 1/2 avocado, sliced
  • 1 cup finely shredded green cabbage
  • 3 tablespoons crumbled vegan feta (I use Trader Joe's)
  • Hot sauce, to taste (I use Aardvark Habanero Hot Sauce)
  • Cilantro, for topping
  • Lime wedges, for serving

Method
 

  1. Heat oven to 400. Place the tostadas on a metal baking sheet and toast for 4 to 5 minutes, or until hot and fragrant.
  2. Meanwhile, heat the beans in a small pot until hot, stirring occasionally.
  3. For the salsa, stir together the tomatoes, lime, cilantro and salt, to taste.
  4. Remove the toasted tostadas from the oven and carefully spread the refried beans on top of each.
  5. Next top the tostadas with the avocado, salsa, cabbage, cheese, hot sauce and cilantro. Serve with lime wedges.
