Simple Spaghetti with Roasted Tomatoes & Basil

Ingredients
  

  • 1 cup SunGold tomatoes (or cherry tomatoes)
  • 1 tablespoon extra virgin olive oil
  • Sea salt, to taste
  • 1 heaping cup cooked spaghetti (use whole wheat or gluten-free, if you wish)
  • 1 tablespoon hot pasta water
  • 1/4 teaspoon dried oregano
  • Fresh ground black pepper, to taste
  • Sea salt, to taste
  • Crushed red pepper flakes, to taste
  • 1/4 cup grated vegan Parmesan
  • 1/4 cup roughly chopped fresh basil

Instructions
 

  • Heat oven to 425.
  • Toss the tomatoes with olive oil on a parchment lined rimmed metal baking sheet, then season with salt.
  • Roast for 10 minutes or until bursting and soft.
  • Gently fold the roasted tomatoes into the cooked spaghetti, along with 1 tablespoon of hot pasta water.
  • Season the pasta with oregano, black pepper, salt, and red pepper flakes, to taste.
  • Top with vegan Parmesan and fresh basil right before serving.
