Vegan Veggie Burger Salad with Thousand Island Dressing

Ingredients
  

Dressing
  • 4 teaspoons vegan mayo
  • 1/2 teaspoon ketchup
  • 1/4 teaspoon fresh lemon juice
  • 1 tablespoon minced dill pickle
  • 2 dashes smoked paprika
  • Freshly ground black pepper
Salad
  • 4 cups mixed greens
  • 1 cooked veggie burger of your choice (I pan fry mine until hot and golden brown), chopped into bite-size pieces
  • 1/3 cup grated carrots
  • 1/3 cup quartered cherry or sun gold tomatoes, or diced heirloom tomatoes
  • 1/2 medium avocado, sliced
  • Pink sea salt, to season avocado
  • 1 tablespoon sprouted seeds
  • 2 teaspoons minced dill pickle

Method
 

  1. Mix the dressing ingredients with a fork until well combined. Taste, and adjust to your liking.
  2. Put your salad ingredients in a medium-large bowl.
  3. Gently toss with the dressing until well-combined.
