Avocado Toast with Apple & Toasted Pepitas

Ingredients
  

  • 1 slice whole grain toast (gluten-free if necessary)
  • 1/4 medium-large avocado; lightly mashed
  • Sea salt, to taste
  • 1/4 medium apple (I use Honeycrisp); thinly sliced
  • 1 tablespoon toasted pepitas

Instructions
 

  • Spread the avocado evenly over the toast.
  • Season with salt.
  • Layer the apple slices on top of the seasoned avocado.
  • Top with pepitas.
