Avocado Toast with Apple & Toasted Pepitas | Living Healthy in Seattle

Here we are again.

Me slapping seemingly random ingredients on a hunk of bread…

And you thinking I’m even crazier than before.

But that’s alright, because crazy or crazy, this right here is a party for your taste buds.

I was thinking about how much I love green salads loaded with creamy avocado and crisp, sweet apple, plus nutty seeds and bam!

Toast topping thoughts became toast tasting reality real quick.

All you have to do to make this avocado toast dream come true is spread gently mashed cado evenly over a golden brown slice of toast, then top her off with thinly sliced apple (I’m looking at you Honeycrisp) and toasted pepitas!

Let’s not forget our fancy pants sea salt now.

I can toast to that!

P.S. I know this toast idea is looking a lot like this toast but they are both unique little snowflakes just like all us humans.

P.P.S. Yes, feel free to use your fave gluten-free bread, as always.

P.P.P.S. The ingredient amounts don’t have to be exact. Just do what makes you a happy camper!

P.P.P.P.S. The dark and damp weather makes it very difficult to take photos. As in this was my 4th shoot… c’est la vie!

Avocado Toast with Apple & Toasted Pepitas

Ingredients
  

  • 1 slice whole grain toast (gluten-free if necessary)
  • 1/4 medium-large avocado; lightly mashed
  • Sea salt, to taste
  • 1/4 medium apple (I use Honeycrisp); thinly sliced
  • 1 tablespoon toasted pepitas

Instructions
 

  • Spread the avocado evenly over the toast.
  • Season with salt.
  • Layer the apple slices on top of the seasoned avocado.
  • Top with pepitas.
