Blended Peanut Butter Pumpkin Overnight Oats with Dark Chocolate

Ingredients
  

  • 1 cup old fashioned rolled oats
  • 1 cup unsweetened unflavored oat milk
  • 1/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon creamy natural peanut butter (no added oil or sugar)
  • 1 tablespoon pure maple syrup, or to taste
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pink sea salt, to taste

Toppings

  • Peanut butter
  • Melted dark chocolate
  • Salted, roasted peanuts
  • Pure maple syrup
  • Sliced banana, optional
  • Ground cinnamon, optional

Instructions
 

  • Blend all of the overnight oat ingredients together until smooth. Taste and adjust ingredient amounts if desired, blending again.
  • Pour the blended oat mixture into a bowl, then let the mixture rest in the fridge for at least 4 hours, or overnight.
  • Top with peanut butter, melted chocolate, peanuts, maple syrup, banana slices, and cinnamon, if you wish.
