I may or may not be a peanut butter + chocolate fiend.

I mean do you blame me??

It’s only the best flavor combo out there.

Peanut butter and pumpkin pair quite nicely together as well…

Call me crazy, or just give it a try yourself!

Got to switch it up every once in a while to keep your taste buds on their toes.

What ever that looks like ha.

So yes it’s no secret that I’m allll about dessert for breakfast.

This here bowl is a perfect excuse to get your sweet tooth excited for fall.

And it’s healthy.

Duh.

Overnight oats/oatmeal has been a popular way to consume oats for a while now.

I’ve been seeing internet peeps blending their oat mixture before letting it sit and soak, so I figured why not give it a go.

All you have to do is blend old fashioned rolled oats, unsweetened unflavored oat milk (for double oat trouble), convenient canned pumpkin puree, creamy peanut butter, pure maple syrup, real deal vanilla extract, fragrant ground cinnamon, and pink sea salt, to taste.

Blend blend blend until smooth.

Then let her chill out in your fridge overnight, or for at least 4 hours.

Raw oats aren’t always easy to digest so make sure your mixture gets a good chance to soften!

Now for the extra exciting part…

Spoon on a big blob of peanut butter, then generously drizzle melted dark chocolate right on top, followed by a sprinkle of salted, roasted peanuts, maple syrup, banana slices, and ground cinnamon, if you’re really going all out.

Dig on in!

P.S. As always taste and adjust the ingredient amounts to suit your liking. I prefer my sweet things on the less sweet end of the spectrum so please do add more maple syrup if you please.

P.P.S. This recipe makes one big serving, or two smaller servings. Depending on your appetite and all.

Ingredients
  

  • 1 cup old fashioned rolled oats
  • 1 cup unsweetened unflavored oat milk
  • 1/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon creamy natural peanut butter (no added oil or sugar)
  • 1 tablespoon pure maple syrup, or to taste
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pink sea salt, to taste

Toppings

  • Peanut butter
  • Melted dark chocolate
  • Salted, roasted peanuts
  • Pure maple syrup
  • Sliced banana, optional
  • Ground cinnamon, optional

Instructions
 

  • Blend all of the overnight oat ingredients together until smooth. Taste and adjust ingredient amounts if desired, blending again.
  • Pour the blended oat mixture into a bowl, then let the mixture rest in the fridge for at least 4 hours, or overnight.
  • Top with peanut butter, melted chocolate, peanuts, maple syrup, banana slices, and cinnamon, if you wish.
