Blended Peanut Butter Pumpkin Overnight Oats with Dark Chocolate

Ingredients
  

  • 1 cup old fashioned rolled oats
  • 1 cup unsweetened unflavored oat milk
  • 1/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon creamy natural peanut butter (no added oil or sugar)
  • 1 tablespoon pure maple syrup, or to taste
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pink sea salt, to taste
Toppings
  • Peanut butter
  • Melted dark chocolate
  • Salted, roasted peanuts
  • Pure maple syrup
  • Sliced banana, optional
  • Ground cinnamon, optional

Method
 

  1. Blend all of the overnight oat ingredients together until smooth. Taste and adjust ingredient amounts if desired, blending again.
  2. Pour the blended oat mixture into a bowl, then let the mixture rest in the fridge for at least 4 hours, or overnight.
  3. Top with peanut butter, melted chocolate, peanuts, maple syrup, banana slices, and cinnamon, if you wish.
