Vegan French Toast with Caramelized Apples

Ingredients
  

Apples

  • 1 1/2 cups small dice apple (I used 1 medium Honeycrisp)
  • 1/2 cup water, plus more if necessary
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • Pink sea salt, to taste

French Toast

  • 2 slices whole grain bread (I used dry sandwich bread)
  • 1/2 cup Just Egg
  • 2 tablespoons unsweetened unflavored oat milk
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon nutritional yeast
  • Pink sea salt, to taste
  • 1 1/2 teaspoon unrefined coconut oil

Toppings

  • Creamy peanut butter (no added oil or sugar)
  • Hemp hearts
  • Pure maple syrup, warmed if desired
  • Ground cinnamon

Instructions
 

  • For the apples, add the apples, water and cinnamon to a medium nonstick pan. Simmer for 10 to 15 minutes, or until the water has evaporated and the apples are soft, stirring occasionally. If the water evaporates before the apples have softened, add more water. Stir in the maple syrup, vanilla, and salt, then heat over low for one minute. Remove from heat.
  • For the french toast, in a shallow bowl (large enough to fit a slice of bread) whisk the Just Egg, milk, syrup, cinnamon, vanilla, nutritional yeast, and salt until well combined. Heat a large nonstick pan over medium-low heat. Add the coconut oil and swirl to coat the pan. Dip the bread in your egg mixture, coating both sides, then carefully transfer to the hot pan. Cook for 5 minutes on each side or until golden brown.
  • Arrange your cooked french toast on a plate, then top with peanut butter, the cooked apples, hemp hearts, plus more syrup and cinnamon, if you wish.
