Cinnamon Maple Baked Pear with Pecans & Almonds

Ingredients
  

  • Unrefined coconut oil, for greasing baking dish
  • 1 medium-large pear (I use Bartlett)
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon organic vanilla bean paste (or pure vanilla extract)
  • Pink sea salt, to taste
  • 1 large plump medjool date, chopped fine
  • 1 heaping tablespoon toasted sliced almonds
  • 1 heaping tablespoon toasted roughly chopped pecans
  • Creamy almond butter, for topping
  • Pure maple syrup, for topping

Instructions
 

  • Heat the oven to 350.
  • Lightly grease an oven-safe bowl or baking dish big enough to fit both pear halves.
  • Slice your pear in half lengthwise, then scoop out the seeds with a melon baller. Arrange the pears, cut sides up, in the greased dish.
  • In a small bowl, whisk the maple syrup, cinnamon, vanilla bean paste, and salt until well combined.
  • Pour the cinnamon maple mixture over the pear halves, coating the cut side of the pears.
  • Sprinkle the chopped date and nuts on top, then bake for 35 minutes or until tender and hot.
  • Drizzle with almond butter and more maple syrup.
