Hellooo new favorite breakfast.

Or dessert… same thing.

I was reminiscing about this scrumptious baked apple recipe and decided that I needed to whip up a pear version.

Because in my opinion, pears are a little more exciting than apples.

Probably because they’re not quite as readily available year-round.

And I’m a sucker for their fragrance, plus juiciness—when it comes to Bartletts at least.

I know it sounds like I’m hating on apples a little bit.

But that’s simply not true!

I’m just super enthused about this recipe.

She turned out even better than expected.

I’d like to think that’s how I come across on dates, although that’s probably not the case based on the fact that I’m still single, ha.

Any wayys.

All you have to do is whisk together pure maple syrup, ground cinnamon, vanilla bean paste (or extract), and pink sea salt then pour your sweet mixture all over a halved pear.

Sprinkle a chopped plump medjool date on top followed by nutty toasted pecans and almonds.

Bake away, until tender and hot, then drizzle on creamy almond butter + more mouthwatering maple.

Just don’t burn your tongue in eager anticipation!

P.S. Your ingredient amounts don’t have to be exact… I know I’ve said this a bajillion times but it’s true! We’re flexible over here. Don’t have vanilla bean paste? Vanilla extract is great. Pecans too expensive? Throw some walnuts on there! Saving your dates for another treat? Invite raisins or craisins to the party. Have your favorite vanilla yogurt or ice cream on hand? Scoop away! Whisk a splash of bourbon in with the syrup mixture while you’re at it.

P.P.S. You can certainly scale this recipe up, which I would highly recommend. I’m sure it’s also tasty cold if you want leftovers. Nothing wrong with a little reheat action either!

Cinnamon Maple Baked Pear with Pecans & Almonds

Ingredients
  

  • Unrefined coconut oil, for greasing baking dish
  • 1 medium-large pear (I use Bartlett)
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon organic vanilla bean paste (or pure vanilla extract)
  • Pink sea salt, to taste
  • 1 large plump medjool date, chopped fine
  • 1 heaping tablespoon toasted sliced almonds
  • 1 heaping tablespoon toasted roughly chopped pecans
  • Creamy almond butter, for topping
  • Pure maple syrup, for topping

Instructions
 

  • Heat the oven to 350.
  • Lightly grease an oven-safe bowl or baking dish big enough to fit both pear halves.
  • Slice your pear in half lengthwise, then scoop out the seeds with a melon baller. Arrange the pears, cut sides up, in the greased dish.
  • In a small bowl, whisk the maple syrup, cinnamon, vanilla bean paste, and salt until well combined.
  • Pour the cinnamon maple mixture over the pear halves, coating the cut side of the pears.
  • Sprinkle the chopped date and nuts on top, then bake for 35 minutes or until tender and hot.
  • Drizzle with almond butter and more maple syrup.
