Avocado Toast with Apple & Toasted Pepitas

Ingredients
  

  • 1 slice whole grain toast (gluten-free if necessary)
  • 1/4 medium-large avocado; lightly mashed
  • Sea salt, to taste
  • 1/4 medium apple (I use Honeycrisp); thinly sliced
  • 1 tablespoon toasted pepitas

Method
 

  1. Spread the avocado evenly over the toast.
  2. Season with salt.
  3. Layer the apple slices on top of the seasoned avocado.
  4. Top with pepitas.
