Cinnamon Maple Baked Pear with Pecans & Almonds

Ingredients
  

  • Unrefined coconut oil, for greasing baking dish
  • 1 medium-large pear (I use Bartlett)
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon organic vanilla bean paste (or pure vanilla extract)
  • Pink sea salt, to taste
  • 1 large plump medjool date, chopped fine
  • 1 heaping tablespoon toasted sliced almonds
  • 1 heaping tablespoon toasted roughly chopped pecans
  • Creamy almond butter, for topping
  • Pure maple syrup, for topping

Method
 

  1. Heat the oven to 350.
  2. Lightly grease an oven-safe bowl or baking dish big enough to fit both pear halves.
  3. Slice your pear in half lengthwise, then scoop out the seeds with a melon baller. Arrange the pears, cut sides up, in the greased dish.
  4. In a small bowl, whisk the maple syrup, cinnamon, vanilla bean paste, and salt until well combined.
  5. Pour the cinnamon maple mixture over the pear halves, coating the cut side of the pears.
  6. Sprinkle the chopped date and nuts on top, then bake for 35 minutes or until tender and hot.
  7. Drizzle with almond butter and more maple syrup.
