Maple Tahini Date Oatmeal with Cinnamon

Ingredients
  

  • 1 cup water
  • 1 large plump medjool date, torn into pieces
  • 1/2 cup quick cooking oats (not instant)
  • Pink sea salt, to taste
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsweetened unflavored oat milk (Silk or Oatly)
  • 1/4 teaspoon pure vanilla extract
  • 1 1/2 teaspoon drippy tahini (no added oil or sugar)
  • 1 teaspoon pure maple syrup
  • Ground cinnamon, for topping
  • Fresh fruit, for serving

Method
 

  1. In a small pot bring 1 cup of water to a boil.
  2. Stir in the date, oats, salt, and cinnamon, then simmer for 3 minutes on low, stirring occasionally.
  3. Stir in the milk and vanilla, then warm over low heat for another minute.
  4. Spoon the oatmeal into a bowl, then top with the tahini, maple syrup, and more cinnamon. Serve with fruit for topping.
