I know I’ve been sharing a lot of breakfast recipes, but I do love breakfast.

Any time of day (or night) obviously!

This cozy, naturally sweet bowl will wrap you all up in a warm embrace.

Pure maple syrup, creamy tahini, plump medjool dates, and fragrant ground cinnamon will do that.

Let’s not forget our vanilla extract (the real stuff), oat milk, and pink sea salt!

This comfort food hug just got even more snug.

Even though spring has sprung in Seattle it’s still chilly and especially goose bumpy in the mornings and evenings.

So whip yourself up a bowl of flavorful oats, find refuge under a plush blanket and enjoy the simplicity of the moment.

P.S. Use extra creamy tahini for the ultimate tahini maple swirl! I’ve been diggin’ SoCo Tahini.

P.P.S. Top off your oats with fruit for a well-rounded snack. Banana and apple are extra tasty options here! I added frozen blackberries for color.

Maple Tahini Date Oatmeal with Cinnamon

Ingredients
  

  • 1 cup water
  • 1 large plump medjool date, torn into pieces
  • 1/2 cup quick cooking oats (not instant)
  • Pink sea salt, to taste
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsweetened unflavored oat milk (Silk or Oatly)
  • 1/4 teaspoon pure vanilla extract
  • 1 1/2 teaspoon drippy tahini (no added oil or sugar)
  • 1 teaspoon pure maple syrup
  • Ground cinnamon, for topping
  • Fresh fruit, for serving

Instructions
 

  • In a small pot bring 1 cup of water to a boil.
  • Stir in the date, oats, salt, and cinnamon, then simmer for 3 minutes on low, stirring occasionally.
  • Stir in the milk and vanilla, then warm over low heat for another minute.
  • Spoon the oatmeal into a bowl, then top with the tahini, maple syrup, and more cinnamon. Serve with fruit for topping.
