It’s always a very happy day when I realize there are precious frozen acai packets lounging about in my produce-packed freezer.

Not like it really matters… there are always decent zucchini to be found in the produce section of my local grocery store.
During the week, I usually just cook for me, myself, and I.
Which makes life super easy because I don’t have to convince anyone (besides myself sometimes) that my concoctions are probably going to turn out reasonably tasty.
But wait, caprese requires cheese.
Well yes, typically caprese includes slices of mild (and utterly delicious) fresh mozzarella along with juicy, sweet tomato and fragrant basil.
Yum dee dum.
