Fried Egg Breakfast Grilled Cheese | Living Healthy in Seattle

Every month is grilled cheese month in my book.

But word around town is that this month is actually officially Grilled Cheese Month.

Who comes up with this stuff anyway?

Like why is National Peanut Butter Lover’s Day March 1st?

Sooo random.

Perhaps it’s no coincidence that 4/20 happens to fall in the middle of Grilled Cheese Month.

Hmm…

I personally don’t need a reason to consume an entire jar of peanut butter or inhale a towering stack of grilled cheeses in one sitting.

(Both of those scenarios do sound like the definition of perfection.)

And I especially don’t need an excuse to devour a grilled cheese for breakfast.

Have you ever fried an egg inside of a grilled cheese sandwich before?!

This genius idea is so fantastic it should be illegal.

I’ve heard of frying an egg inside a slice of toast before…

But throw some cheese and extra bread in the mix and you know things are about to get crazy in the best way possible.

Perfectly toasted golden brown whole grain bread.

Crispy, melty sharp cheddar and Parmesan cheese.

Luxurious runny yolk…

It’s a sad day to be a vegan.

That’s all I’m saying.

Grilled cheeses for breakfast, lunch and dinner?

I think so.

P.S. My “hole” was able to fit two eggs! Umm…

But use your best judgement.

P.P.S. Gruyere would be kind of spectacular here.

P.P.P.S. If you’re trying to win someone over. Make that special person this sandwich.

Game over.

P.P.P.P.S. You can salt your egg too! The cheese is salty enough for me, but do your thang.

P.P.P.P.P.S. Don’t forget to grill up the mini circle sandwich you cut out and scarf that down pronto.
