Here we go again!

So I had this bag of rock hard, shriveled raisins taking refuge in my pantry for what seemed like ages.

And instead of composting those chaps, I made it my duty to revitalize (may we go as far as saying resurrect) the fellows, returning them to their somewhat plump beginnings.

After soaking the sad dried fruits in near boiling water for 10 minutes or so, I drained off the liquid then set about making this here baked oatmeal.

What do you know! They were soft, delectable additions to the cinnamon, oaty breakfast mashup.

If you too, would like to bake up a healthy yet tasty breakfast treat, simply whisk together a flax “egg” (that’s flax seed meal mixed with H2O) with unsweetened unflavored oat milk, ground cinnamon, pure vanilla extract, real deal maple syrup, sea salt, mashed ripe banana, rolled oats, your raisin friends, and nutty toasted pecans (or walnuts).

Carefully pour the mixture into a greased 8×8 baking pan, dump some coconut sugar on there (if your sweet tooth is making herself known) then bake bake bake until golden brown and tastyyyy.

Scoop yourself a piping hot bowl of comfort, then get to dolloping on a dreamy blob of peanut butter.

Throw some juicy berries in there and finish it all off with an extra flourish of maple syrup.

Oh yum.

P.S. I ran out of maple syrup and had just a wee tablespoon to mix in the “batter” but it surely tastes better with an extra splash of the stuff. That’s where my coconut sugar idea came into play hehe.

P.P.S. The riper the banana the sweeter the fruit! As in speckled and freckled naners are more than welcome. And actually preferred over their younger peers.

P.P.P.S. Reheat leftovers in the oven, or microwave if you’re strapped for time. Embrace the cozy mush.

Vegan Baked Cinnamon Raisin Oatmeal

Ingredients
  

  • Coconut oil or vegan butter; for greasing 8x8 pan
  • 1 tablespoon flax seed meal
  • 1 2/3 cup unsweetened unflavored oat milk (I use Silk)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons pure maple syrup, or to taste
  • Sea salt
  • 1/2 cup mashed very ripe banana
  • 1 1/4 cup rolled oats
  • 1/2 cup raisins
  • 1/2 cup toasted walnuts or pecans
  • Coconut sugar (optional); for sprinkling on top

Toppings

  • Pure maple syrup
  • Nut butter (I used peanut butter)
  • Fruit (I used thawed, frozen blueberries and strawberries)

Instructions
 

  • Heat oven to 350 and grease a 8x8 baking pan. (I used a glass pan.)
  • While the oven is heating mix the flax seed meal with 3 tablespoons of water. Let the mixture rest for 5 minutes.
  • After the flax mixture has rested, whisk in the oat milk, cinnamon, vanilla, maple syrup, salt, and mashed banana until well combined. Taste, and adjust the ingredient amounts, adding more maple syrup or salt, if you like.
  • Fold in the oats, raisins, and nuts.
  • Pour the mixture into the greased baking pan, sprinkling with coconut sugar if you wish.
  • Bake for 50 minutes, or until all the liquid is absorbed and the oats are lightly browned.
  • Let the baked oats rest for 5 minutes before serving.
  • Top with more maple syrup, nut butter, and fruit, if you like.
