Here’s a freshie for yuh!
This salad screams summer like kiddos running through sprinklers and adults (aka me) desperately flagging down the ice cream man, hoping he (or she or they because it’s 2020 people) accepts Venmo as a source of payment…
It’s sweet, savory, juicy, crisp, and refreshing.
Plus only six ingredients including our gal pink sea salt.
I’d say take it along on your next picnic (since what else are you really doing with your life right now besides going on walks and finishing Netflix) and pop some rosé to celebrate blue skies and impressive tan lines.
All you have to do is fold cantaloupe balls (erm, not sure what else to call them??), raw sweet corn kernels, thinly sliced English cucumber, fresh lime (or lemon!) juice, fragrant basil, and salt together until tossed and sauced.
It’s a vibe.
P.S. If you don’t have a melon baller tool, feel free to cube or chunk or whatever your cantaloupe.
P.P.S. I *carefully* sliced the kernels off of a raw corn on the cob then threw them right in the salad. No cooking here!
P.P.P.S. I used lime juice but lemon would be lovely as well, if not better. Cater to your mood.
P.P.P.P.S. Fresh basil is one of my favorite herbs, although if you have mint on hand or simply prefer it, go right ahead.
Cantaloupe & Corn Salad with Cucumber & Basil
Ingredients
- 1 1/3 cups cantaloupe balls
- 3/4 cup raw sweet corn kernels (sliced off the cob)
- 1/4 cup thinly sliced English cucumber
- 2 teaspoons fresh lime or lemon juice
- 2 tablespoons chopped or torn fresh basil (mint works as well)
- Pink sea salt, to taste
Instructions
- Gently toss the ingredients until combined.
