Hooray! Just another excuse to consume peanut butter in a somewhat healthy manner.
And at the very beginning of the day.
Now that sounds like a pretty sweet deal to me.
Especially because sweet potato is involved too!
Even though I’ve been on a complete smoothie and smoothie bowl kick lately, this combo of ingredients is pretty darn exciting as well.
And you know, sometimes it is nice to chew a little bit.
If you stick a smoothie in my hands I’ll chug that thing in 2 minutes flat.
Anything shorter than that will surely bring on the worst brain freeze known to man kind.
2 minutes is much more reasonable, don’t you think?
But still, what I’m trying to get at is downing your breakfast in a mere 2 minutes is not the best for your precious stomach.
And it’s also pretty depressing when you realize your first meal of the day disappeared so quickly… and then you have to patiently wait a few hours before lunch hour hits.
And no, lunch is not at 9:55 am.
So slow down, and chew a little.
If you bake up your sweet potato ahead of time, this breakfast will be ready to savor in just a few minutes.
Sounds like an ideal situation for busy mornings filled with sleepy calf raises (yeah I try to exercise a little before shoving food in my face) and half-assed attempts at taming a lion’s mane aka my hair.
If you’re a short-haired individual (or no-haired individual or an individual with obedient hair)… lucky you.
Anyway.
All you have to do is top half of a hot, tender sweet potato with tropical unrefined coconut oil, ground cinnamon, a pinch of salt, creamy banana slices, nutty peanut butter, a sprinkling of coconut granola, and maybe a few dried cranberries, if you feel like it.
Take a spoon to that!
P.S. I’ve shared another breakfast sweet potato recipe before. That one’s pretty tasty too… but peanut butter always wins. Always.
P.P.S. Obviously, you don’t have to save this recipe for the mornings only. Lunch, dinner, snack time, or dessert work as well. (But what kind of dessert would that be? Not a real one is the correct answer.)
P.P.P.S. If you really want to add more sugar, a drizzle of honey or maple syrup (if you’re vegan) would be nice.
P.P.P.P.S. I’m still stuck with the loner phone and its crummy as can be camera… so I finally whipped out my dad’s slightly intimidating real deal camera and wowza. What a difference! Clearly I need to actually sit my butt down and read the manual, but still… the colors! The clarity!! I think it’s time to celebrate with some ice cream, hehe.
