I’ve been whipping up this guy on the regular because it’s a. easy b. tasty. c. healthy and d. an all around, well-rounded meal. (Redundancy much.)
To be completely honest, I thought I was going to low-key hate chickpea pasta.
I was so certain it was going to be straight up mush, but it actually held up pretty well!

Now I’m normally totally fine just snacking on some fresh seasonal fruit and savoring erm inhaling a tasty protein bar for lunch.
Now that it’s cloudy, dark, cool, and damp I don’t mind putting my oven to work.
In other words, let’s roast and bake away!
