To orange tomatoes.
They’re like candy.
But better.
Not just because they’re good for you, but because they taste amazing!
So naturally, my one goal in life right now is to include these babies in pretty much every savory dish.
(Because tomato ice cream… let’s not.)
And you know what goes really well with sweet tomatoes?
Salty, creamy cheese!
Didn’t see that one coming, did you? 😉
And you know what goes really, really well with gooey cheese?
Pasta!
(I’m the definition of predictable.)
To amp up the health factor, throw in some fresh spinach.
You know, to make Popeye proud and everything.
And because I need to eat extra veggies this week, to balance out all the sweets that were consumed this past weekend on Orcas Island.
Here’s the rundown, in case you’re slightly interested (or just want to make yourself feel better):
1 perfectly buttery raspberry bar (minus a bite I so graciously offered away)
1 snickerdoodle cookie (again, minus a bite because I’m so very kind)
1 bite of a Mexican wedding cookie (clearly I was the sharee this time or that whole thing would have been inhaled by yours truly)
1 bite of the richest white chocolate macadamia nut cookie ever (again, the sharee)
1 Andes mint (because after two people devour an entire large pizza there is actually no more room for dessert)
1 whole wheat cinnamon roll with cream cheese frosting (this counts as breakfast)
3 double s’mores (each consisting of 2 perfectly toasted vegan marshmallows, a large slab of Endangered Species milk chocolate and 2 squares of organic honey graham crackers), plus a stray marshmallow… that’s seven marshmallows in one evening hehe
1 orange flavored cinnamon sugar pastry (those darn yellow jackets were fighting me for this one)
5 bites or so of a breakfast parfait (the very sweet kind, consisting of vanilla yogurt, granola and dried fruit)
1 cup of vanilla ice cream (because they were out of waffle cones!)
(Not to mention a green tea cider, blackberry margarita and pear cider)
Yikes.
My sweet tooth is not to be underestimated.
At least there was hiking, swimming and kayaking involved to help partially negate this sugar overload.
Back to healthiness.
Or sort of, because cheese.
Whole wheat pasta, juicy orange tomatoes, sweet sauteed red onion, fresh baby spinach, tangy blue cheese, nutty Parmesan, spicy red pepper flakes, extra virgin olive oil and herby dried parsley make summer comfort food a thing.
P.S. The pan will be a b*** to clean if you don’t use nonstick. Just a warning.
P.P.S. Less than one month until the IFBC goes down! And I just noticed that there will be chocolate chip cookie dough truffles… help me please.
