Cinnamon Oats with Persimmon & Almond Butter

It’s time to try something new!

At least on my part… I don’t know, have you tried a persimmon before?

Persimmons are one of those fallish fruits that I’ve always eyed.

And I’ve always chickened out when it came to actually grabbing one and sticking it in my shopping cart.

Not this time though!

I did my research and came to the conclusion that picking out a fuyu persimmon is a bit safer than going for the hachiya variety.

Yes I know, we’re talking fruit!

But apparently if hachiyas aren’t completely semi-mushy soft your mouth will pay for your impatience.

As in you’ll pucker up real good and your mouth will feel drier than the Sahara.

Now that doesn’t sound very pleasant at all.

So fuyu it is.

You can enjoy these guys when they’re pretty firm, kind of between an apple and tomato in texture, I suppose.

Flavorwise, I’d say they taste like papaya with a hint of apricot.

Honestly papaya is one of my least favorite fruits (slime factor), but persimmons are pretty decent snackage material.

Either bite right into your deep orange piece of fruit, or slice it up and toss it in a salad with fresh greens, avocado, and tangy goat cheese.

Or simmer your persimmon in a pot of oats with tropical coconut oil, ground cinnamon, and salt, of course. Stir a bit of pure maple syrup or honey in there along with creamy almond butter and unsweetened almond milk, then top your comforting bowl of oats off with more persimmon, a drizzle of almond butter, plus a sprinkling of crunchy granola.

Bang bang breakfast is served.

P.S. Can’t get your hands on a persimmon? Grab a pear or apple instead.

P.P.S. It’s gotten quite gray and dark in Seattle, so the whole taking photos in natural daylight thing is a bit of a challenge, to say the least. I might have to migrate down south where the sun always shines.

P.P.P.S. Yes yes it’s actually a coincidence that this bowl of yum has some Halloween feels. Boo-ya!

This was very tasty. I made it with just the persimmon, oats, cinnamon, and water and the persimmon has a nice sweetness to it. Will definitely make this again.
