Whew what a whirlwind the last few weeks have been!
I was thrilled to visit Europe again and it all went by so quickly.
My sis and I strolled/power-walked through London, Paris, Saint Tropez, Cannes andd Cinque Terre.
All were lovely, but Paris will forever have my heart.
I was amazed at the delicious vegan food London and Paris have to offer!
We’re talking “buttery” pastries and all.
Saint Tropez, Cannes and Cinque Terre had some surprisingly tasty options as well.
Plant-based margherita pizza?? Beautiful veggie loaded toasts and even melty chocolate hazelnut spread crepes???
In other words, Seattle you need to step up your game man!
Anywho.
Here we are with a simple SUMMER (because it’s still summer!) smoothie, which puts gorgeous, juicy watermelon to work.
Ahem, I was disappointed once again by a melon, so what do we do??
Chop it up and throw it in a smoothie.
No one will be the wiser.
Except I inhaled it all myself, as per usual.
All you have to do, if you want this smoothie too, is blend up frozen cubed watermelon, diced refreshing English cucumber, cha cha cha chia seeds, a squeeze of zesty fresh lemon, plus a pinch of pink sea salt to enhance those flavor flavs.
H2O brings everyone together.
Pour it up.
(Add a healthy glug of vodka if you’re really here to party… cheers!)
P.S. If you don’t have time to freeze your melon just throw in a handful of ice cubs, which may not be the best for your blender friend but she can take a hit for you every once in a while.
P.P.S. I prefer my food/drinks on the less-sweet side, so I didn’t add any additional sweetener. If your watermelon isn’t the sweetest thing, or if you simply prefer more suge/sug?? throw a couple softened dates in that blender!
P.P.P.S. I feel like this drank would be extra tasty paired with avocado toast. Yes, yes it would. Millennial much?
Cucumber Chia Watermelon Smoothie
Ingredients
- 3 cups frozen cubed watermelon
- 1 cup diced English cucumber (seeds and skin intact)
- 2 tablespoons chia seeds
- 1 tablespoon fresh lemon juice
- 1 pinch pink sea salt
- 3/4 cup chilled water, or enough to reach desired consistency
- 2 plump medjool dates, softened in hot water (optional, for additional sweetness)
Instructions
- Blend until smooth. Taste, and adjust if desired.
