Yes I know it’s spring (hooray!) and sweet potatoes are fall fare, but I personally enjoy consuming those guys all the time.

They’re flavorful, versatile, affordable, and healthy… so what’s not to like?

I’m all about savory sweet potato dishes.

Hi cozy Sweet Potato Peanut Curry with Spinach and Tofu, hearty Vegan Sandwich with Avocado, Roasted Kale and Sweet Potato, anddd refreshing Sweet Potato with Black Beans, Corn and Avocado.

Whew I must really dig long recipe titles.

Plus muchos avocados but that’s a whole other story entirely.

Oh and let’s not forget sweet sweet potato situations.

Ha. Ha.

Hello there tropical Sweet Potato and Coconut Toast with Almond Butter Drizzle, luscious Spiced Sweet Potato Smoothie (pro tip: swap in a large spoonful of peanut butter for the almond butter), mouth-watering Breakfast Sweet Potato with Peanut Butter and Banana, and  Breakfast Sweet Potato with Apple and Almonds.

Because sweet potatoes should definitely be consumed for breakfast…

Introducing yet another breakfasty sweet potatohhh!

Wow I’m an excited dork.

You start with a bowl of creamy unsweetened coconut milk yogurt, then dress her up with chilled baked sweet potato (of course), nutty toasted pecans, toasted unsweetened coconut flakes, a few generous dashes of pumpkin pie spice (trust me, the stuff is great), your fave granola (I went for no sugar added cinnamon raisin… the raisins are sweet so it’s not nearly as sad as it sounds), plus a drizzle of pure maple syrup, to taste.

Yusss.

Want some fruit in your life? Throw on a handful of perfectly ripened banana slices, juicy red grapes, or fresh bluebs, then dig in.

P.S. If you really want to use real deal dairy yogurt, go for plain Greek. Your bowl will no longer be a “double coconut bowl” but that’s okay. We’re adaptable over here.

P.P.S. You can use sliced sweet potato, diced sweet potato, or mashed sweet potato. What ever floats your boat. I usually leave the skin on (more nutrition, less waste) but naked potatoes tend to be more photogenic. Priorities… and don’t forget to season your sweet potato with a pinch of salt! It really brings out the flavors.
