So I kind of posted a very similar recipe last spring.
But I do have to say this one is superior.
Just because.
“Because” is always a sufficient snarky answer, but in case you want the real reasons, here you go:
A. There are figs involved this time around.
I used to be afraid of figs.
Let’s be honest, they’re straight up ugly.
But then I realized, they’re the cute kind of ugly, like snorting pugs and dopey sloths.
And once I managed to obtain a bad batch of figgies that tasted a little like my grandma’s basement.
But then I also realized that everyone deserves a second chance.
Third chances though?
Not so much.
Thankfully I found out that figs actually taste subtly sweet in their prime.
Umm and did I mention that they’re pricey suckers?
Enter parental wallet.
Haha but really, wait until figs are in season and on sale!
It’s that simple.
B. There is 0 added sugar going on here.
So you can feel a little better about inhaling daintily nibbling on baguettes and cheese like the French.
The French are beautiful (and skinny), after all.
If you too, want to be beautiful and skinny, simply drizzle a little extra virgin olive oil over fresh slices of baguette, smear some creamy burrata on there, arrange juicy sliced figs and strawberries on top of the oozing cheese, drizzle a bit of raspberry vinegar over the fruit for even more flavor, season with S&P, then toss a handful of fresh basil leaves on top of your masterpiece.
Voila!
Sharing is optional.
P.S. Serve this fancy schmancy appetizer with a bottle of your favorite bubbly. Champagne anyone?
P.P.S. If you’re all about the figs, go ahead and nix the strawberries.
P.P.P.S. Please don’t get offended by my beautiful and skinny talk. I’d much rather be homies with Hagrid than Fleur Delacour.
