Have you tried grilled cheese before?
No no, I’m not talking about the glorious sandwich (which usually isn’t even grilled…)
I’m speaking of throwing some slabs of cheese right on those hot grates and getting some nice grill marks on there and everything!
Wait, wait.
You’re probably thinking the cheese would and should just melt all over the place like the Wicked Witch of the West and drip on down all gooey like into the flames to start a nice big fire all up in your face.
Well yes, that’s precisely what would happen if you tried to grill up a slice of provolone, for example.
So don’t do that!
But do get your hands on some magical halloumi cheese and grill to your little heart’s content.
Halloumi, in case you got tripped up on the word, is a semi-hard type of brined cheese that originated in Cyprus, apparently.
If you don’t believe me, just ask Google.
Anyway, this particular cheese is made from goat’s milk, sheep’s milk, and sometimes even cow’s milk.
All you really need to know is that halloumi is delicious, plus it has a high melting point so that’s why you can successfully grill it up or even fry it!
Like pretty much all cheeses, halloumi is salty and savory.
So I wanted to pair it with something sweet, of course.
Enter watermelon!
It’s summer time, after all.
Since the grill is already going strong, why not toss some watermelon on there too?
Simply coat your halloumi and watermelon slices in olive oil, then grill both sides until some pretty grill marks form. Layer your juicy watermelon, almost melty cheese, and refreshing cucumber slices (if you want to include some veggies) on a platter then drizzle drizzle drizzle a little bit more olive oil and a splash of balsamic vinegar before seasoning with salt and freshly ground black pepper. Top everything off with a handful of fragrant, fresh basil leaves.
Oh you fancy huh?
P.S. If you don’t own a grill or you’re just afraid to get the damn thing going, you could skip the whole grilling process and this dish will still turn out reasonably well.
P.P.S. Don’t let the idea of hot fruit gross you out. It’s not that weird, I promise.
P.P.P.S. You can leave out the cucumber if you don’t care about meeting your suggested daily veg intake, but the watermelon + halloumi + basil combo is definitely necessary.
P.P.P.P.S. Don’t be alarmed if the halloumi squeaks when you chew it. It’s supposed to do that.
