Now I know this isn’t really winter comfort food material.
But it is healthy resolutions + tasty stuff!
I’ve been seeing blogger and YouTube peeps trying out Trader Joe’s jicama wraps so I had to do the same.
And I have to say…
Not bad, not bad at all!
If you’re wanting a light and refreshing alternative to regular wraps or tortillas this is it.
Plus they’re only one ingredient.
Jicama, duh.
Making them gluten-free and vegan.
Plus low-carb?
Although I love me some carbs (and you should too) so that’s not really a concern.
Basically I threw together some hummus veggie tacos because why the heck not!
They came together in no time and worked out quite well for a healthy, late light lunch.
I didn’t include ingredient amounts because that s*** is tedious and rather unnecessary, especially in this case.
Just load your little wraps up with hummus and veggies plus zesty lemon juice and seasonings then you’re all set!
I didn’t have any avocado on hand at the time but know for a fact that cado would be a lovely addition.
Do it.
P.S. If you can’t acquire jicama wraps not to worry! You can also use regular wraps or tortillas of your choice. You consume the jicama fellows raw but you may want to heat up a tortilla briefly before piling on the good stuff.
P.P.S. Jicama is a Mexican root, mellow in flavor and crunchy in texture.
P.P.P.S. This Hummus Vegetable Wrap with Avocado is a similar, yet more substantial option if you’re going for a fuller belly. I just like to save room for dessert hehe.
Jicama Wrap Tacos with Hummus & Veggies
Ingredients
- 4 jicama wraps (Trader Joe's) or your favorite wrap/tortilla
- Hummus
- Crushed red pepper flakes
- Dried oregano
- Freshly cracked black pepper
- Pink sea salt
- Thinly sliced English cucumber
- Shredded romaine
- Grated carrots
- Thinly sliced yellow bell pepper (red and orange work too)
- Sliced avocado (optional)
- Sprouted pepitas
- Fresh lemon juice
Instructions
- Carefully lay out the wraps.
- Spread a generous layer of hummus down the center of each wrap.
- Season with red pepper flakes, oregano, pepper and salt.
- Layer on the rest of the ingredients, followed by a light squeeze of fresh lemon juice.
- Fold in half and enjoy!
