So, a stack of subpar, stiff corn tortillas had been hanging out in my fridge taking up precious real estate.

I figured it was about time to turn those loitering carbs into something somewhat edible.

It only took me half a second to come to the conclusion that the tortillas were going to see some frying action, and share my plate with creamy scrambled eggs.

And cheese, of course.

Because cheese can cover up some otherwise sad ingredients.

I’m still trying to decide if that’s a good thing or not.

In this case, it’s definitely a good thing.

The tortillas get nice and hot and crispy, and the eggs add some oomph.

I didn’t go too crazy with the toppings but you could definitely add a generous dollop of guac to your mound of eggy, cheesy, fried tortillas.

Woah woah, that kind of sounded (very) unhealthy, but believe me, it’s really not.

You don’t have to go too insane with the cheese, and only a couple teaspoons of oil are used for the whole frying business.

Plus, you can add some diced bell peppers and maybe even sweet corn, if your little heart so desires.

I tried to keep it simple though.

10-minute meals are all the rage in my kitchen these days.

I’d rather spend time out in the sun (a rare Seattle occurrence) then slave away in the kitchen, chopping 12 billion ingredients and whisking my arm right off.

For my version of migas, which are fried tortilla strips mixed with scrambled eggs and other Tex-Mexish ingredients (if you have figured that out already), all you have to do is fry up some corn tortilla strips in a splash of canola oil til they start to get nice and crispy, then stir in some beaten eggs, season with a pinch of salt, fold in black beans, get the mixture nice and hot, then top it all off with your favorite pico de gallo or tomato salsa, crumbled queso Cotija, fresh Cilantro and spicy hot sauce!

Yes.

P.S. If you’re all about the melty cheeses, go ahead and use shredded cheddar, Jack or mozzarella instead of Cotija.

P.P.S. Eat it when it’s hot! Like right out of the pan.

P.P.P.S. To feed two peeps (or just one really hungry peep), up the egg count to 4 and pile on them toppings.
