Peanut Butter & Fig Toast with Granola

Peanut Butter & Fig Toast with Granola | Living Healthy in Seattle

It’s toast time!

I make toast pretty much every single day.

And either smear it with globs on globs of creamy peanut butter.

Or mash half of a perfectly ripened avocado right on the toasty bread.

Since I’m usually quite lazy (and impatient), the toppings end there.

Occasionally I will fancy up my toast though.

When I’m not dying from hanger and have a couple extra minutes at my disposal, that is.

A hangry me will shove pretty much anything and everything into my mouth, including but not limited to untoasted, unadorned slices of sandwich bread, spoonfuls of peanut butter straight from the jar (obviously… and yes I double-dip so stay away unless for some odd reason you want my germs), hunks of sharp cheddar (the only acceptable type of cheddar, that and extra sharp), and leftover cold canned beans.

Yummm.

Actually though.

But, as I always tell my friends when they’re experiencing problems in the boy (or girl) department, “you can do better.”

I got 99 problems but toast ain’t one…

Sorry, could not help myself, hehe.

As I was saying, why have an average piece of toast when you can have toasted whole grain bread topped with salted creamy peanut butter, ground cinnamon, sweet sliced figs, and crunchy granola?

You’re going to want to pop two slices of bread in the toaster because one is just not enough.

P.S. You could definitely use almond butter instead of peanut butter. Or do half and half if you’re the indecisive sort.

P.P.S. Gluten-free bread is an option too, if you’re wanting to stay away from gluteny things.

P.P.P.S. I used unsweetened dried figs, but you could certainly use fresh!
