It’s about time for a snack!

Not a potentially boring, ho-hum snack, like baby carrots.

(Don’t get me wrong, I love my carrots… )

Today we’re talking sweet and salty, crunchy and creamy.

A snack that can pass as dessert!

Or breakfast.

In fact, that’s exactly what I did.

I inhaled these mouth-watering bites for brekkie with a banana on the side.

So.

Good.

And guess what?

This snack is packed with protein and fiber!

As a bonus, there is zero added sugar.

Nada.

Okay, enough with all of this suspense.

(I’m not that much of a jerk.)

If you have a couple spare minutes (you do) and the five ingredients I’m about to go over (go get them, asap) you can enjoy a satisfying, well-balanced snack too!

First you’re going to grab two soft medjool dates.

Then you’re going to slice both dates in half, and remove the pits.

Now, stuff the sweet date halves with salty, creamy peanut butter.

Stop right here and you already have a pretty awesome snack.

But we’re taking it a couple steps further.

Top the peanut butter stuffed dates with ground cinnamon for an extra punch of flavor, then sprinkle some crunchy cacao nibs and toasted unsweetened coconut flakes right on top.

Anddd you’re done!

Wash these babies down with a tall glass of unsweetened vanilla almond milk.

P.S. Energy balls are very popular right now. Those guys are great for packing (because they’re more homogeneous and won’t make a drippy nut butter mess) but I prefer these stuffed dates for at-home snacking. The contrast of texture and flavors is more interesting and enjoyable… at least I think so. It’s all about drippy nut butter magic after all.

P.P.S. Feel free to swap in almond butter for the peanut butter if you like. But umm, peanut butter is #1.
