Spicy Veggie Chili

Spicy Veggie Chili | Living Healthy in Seattle Spicy Veggie Chili | Living Healthy in SeattleIf spicy is an option, I will always take it.

We’re talking 4 star spicy.

Because (let’s be real here) who actually wants to be in pain from soooo much spice?

It’s nice to feel a tingle on your tongue, possibly shed a drop or two of sweat, add some much needed color to your cheeks and reach for the water glass every couple minutes.

But if you feel like you’re going to keel over and die from all the spiciness, that’s taking things a little too far.

Not to mention, the next day is not very fun either.

(I’m not going to go there…)

5 star people, you crazy.

I love this particular chili because it has a lot of flavor going on, not to mention it’s super duper healthy.

And of course, spicy.

If you’re feeding a straight up carnivore, be sure to add extra spice so that he or she fails to notice the lack of meat due to all that fire.

Just kidding.

It’s tasty as is.

There are three main origins of spiciness in this recipe, so you can take one out or adjust the amounts if you don’t care to sport a numb tongue, sweat like you’re participating in a hot yoga sesh, turn redder than Uncle Dursley or chug water by the gallon.

Okay that was a bit dramatic.

But really, remove the seeds from the jalapeno (while wearing gloves please!), take out those hot green chilies and reduce the chili powder if you’re feeling extra lame.

So, what all goes into this chili besides the spiciness?

Sauteed yellow onion and minced garlic, flavorful tomato paste, juicy diced tomatoes, hot green chilies, a (large) jalapeno pepper, garbanzo beans, black beans and pinto beans for some protein, earthy ground cumin, spicy chili powder, crisp-tender zucchini, crunchy green bell pepper, plus sweet corn make a mean veggie chili.

Top your bowl off with creamy avocado, shredded Jack cheese, cooling sour cream, sliced scallions and bright cilantro, if you wish.

P.S. Vegan friends, clearly leave off the cheese and sour cream. Unless you picked some vegan varieties up from the store.

P.P.S. Serve this chili with homemade, warm cornbread. It’s required. Don’t forget the honey butter!

P.P.P.S. Avocado, cheese and sour cream will help cool your tongue down. You’re welcome.
