Another day, another smoothie.
This pretty little thing is packed with summer strawberries and juicy apricots.
It’s uber refreshing, and a delicious balance of sweet + tart.
All you have to do is blend together succulent strawberries, frozen apricot and extra ripe banana slices, creamy coconut milk yogurt, a generous glug of oat milk (I like the full fat variety… mmm), plus pure vanilla extract and a couple spoonfuls of hemp protein, if you’d like!
Pour her up, garnish if you’re feeling especially fancy, then enjoy!
P.S. This recipe, like most of my recipes, doesn’t have to be exact. Have frozen strawberries and fresh apricots? Use those instead! Want a sweeter smoothie? Add a drizzle of agave. This is your smoothie for your enjoyment, after all.
P.P.S. I like to pair this beautiful bevvy with a slice of perfectly golden brown toast slathered in crunchy almond butter. Immaculate snack vibes right there.
Strawberry Apricot Smoothie
Ingredients
- 2 cups halved or quartered fresh strawberries (halve smaller berries, quarter larger berries)
- 1 1/2 cups frozen apricot slices
- 1/2 cup very ripe frozen banana slices
- 1/2 cup unsweetened unflavored coconut milk yogurt (like SoDelicious)
- 1/2 cup unflavored oat milk (I used Oatly original full fat)
- 1 teaspoon pure vanilla extract
- 2 tablespoons pure hemp protein (optional)
Instructions
- Blend until smooth. Taste, and adjust ingredient amounts if you'd like.
