I could never become vegan.
Okay, “never” is a very strong word, but cheese! ice cream! yogurt! cheese again!
It would be a struggle.
Although, enjoying vegan dishes several times a week seems completely doable.
And I feel so wonderful after I eat a vegan meal.
Too wonderful because not long after, out the Ben & Jerry’s pint comes.
It’s contents disappearing in a mere 48 seconds.
So much for eating a healthy, light dinner… and feeling wonderful.
Yeah that’s exactly what happened after I cooked up and savored this summer veggie quinoa recipe.
Next time around I’ll try to have more self-control.

This recipe really is quite flavorful though.
Protein-packed quinoa, sauteed garlic and onions, crunchy carrots, bright bell pepper, summery zucchini, zesty lemon, creamy garbanzo beans, and herby parsley prove that vegan can be exciting.
P.S. Add a few dashes of red pepper flakes if you’re looking for an extra kick.
P.P.S. This would be exceptionally delicious with some crumbled feta or grated parmesan… shh! I didn’t tell you.
