I do enjoy eggs, especially for dinner.
With perfectly toasty whole grain toast!
And creamy dreamy avocado!!
But sometimes I want something egg-like, that’s not actually well, eggs.
Eggs are obviously not vegan, and some vegetarians choose to kick eggs to the curb as well.
Which does make some sense when you really think about it.
But let’s not think about it too much.
Runny eggs make me gag 79% of the time anyway.
Side note: If you’re still confused about the difference between a vegan and a vegetarian (and actually somewhat care) Google it.
What I’m getting at is, tofu can turn into a pretty decent scramble.
Sure it’s a bit more crumbly than real deal scrambled eggs, but it will do in a pinch.
Like eggs, tofu is a great source of protein, and it’s cheap!

I spend enough money on organic almond butter, fancy pants coconut granola, and exotic dried medjool dates as is.
No need to introduce anymore pricey hippie ish into this equation.
Back to the tofu.
So in order to whip up this easy scramble, you’re going to heat refined (or unrefined for a slightly tropical flavor) coconut oil up in a medium nonstick skillet, then toss in your crumbled firm tofu. Add some savory nutritional yeast, bright turmeric, and spicy cayenne to the sizzling pan, then introduce fresh grated carrots, green peas, and liquid aminos to the mix. Throw in a handful of chickpeas for an extra protein kick if you like, then stir in some funky vegan kimchi off the heat.
Taa daaa!
Top with avocado slices and fresh parsley or cilantro like a boss.
P.S. Make sure your tofu (and chickpeas) are dry! The tofu won’t brown up nicely if it’s soggy to begin with.
P.P.S. Cayenne can be hot hot hot! I added two ballsy dashes and definitely felt the heat. Consider yourself warned.
P.P.P.S. I realize this dish kind of looks like (and kind of is) a plebeian meal, but I can assure you that there is some real flavor going on. And yeah, it also resembles cat food. Whatever. Not everyone is as photogenic as acai bowls.
P.P.P.P.S. This recipe should align with most diet related resolutions, unless you’re going the Paleo route (which I do not recommend, but you do you). It’s also never too early to start working on that summer bikini bod… just sayin.
