Once upon a time I purchased an $8 smoothie from a fancy schmancy healthy chain that shall remain unnamed.

First I cried because what the heck I just spent 8 whole bucks on a nonalcoholic beverage?!

Then I cried because it tasted so damn good.

Yep, you guessed it. It was an avocado smoothie.

Before you even start to think how gross and unappetizing this concept sounds, hear me out.

It was sooo creamy.

And fruity.

And refreshing.

So naturally I had to whip one up in my own kitchen. Because an $8 smoothie is not happening again anytime soon.

Sweet pineapple juice, creamy avocado, tropical mango, good ole banana, zingy ginger and fresh parsley make a killer drink.

P.S. I like my avocado smoothie extra thick and creamy, so a spoon is kind of necessary. (And I shouldn’t really be calling it a “drink” but whatever.)

P.P.S. If you have a strange aversion to spoons or just want a thinner smoothie, add more pineapple juice!
