No matter how hard I try, I just can’t stop with the pasta.
It’s so easy to whip up and you can add what ever seasonal produce you’re feeling at the moment!
Pasta can get fancy schmancy, complete with homemade sauces and toasted nuts…
But it can also be super simple.
Helloooo juicy sun gold tomatoes, sweet corn, and fragrant basil!
Add a nice little glug of evoo, season her up then you’re good to go.
Wait what? It’s really that basic?
Yes, we’re talking fresh dinner on the table in just 15 minutes.

Oh, and of course you can sprinkle on a hefty dose of vegan Parm if you’re feeling the “cheese” scene.
For my real deal cheese eating friends, utilize actual Parm or even invite feta to the carb party!
Hooray for options.
P.S. Gluten-free individuals, use your fave gluten-free pasta of course.
P.P.S. I have a similar recipe over here… minus the pasta, plus an egg. You could very well add an egg to the pasta. Ideas man.
P.P.P.S. If you have fresh corn on your hands, you can just toss in the raw kernels along with the tomatoes and olive oil. Why not?
