Spinach artichoke dip is hands down my very favorite dip.

Well homemade spicy guac is definitely up there too but rich and creamy spinach artichoke dip seems much more like a treat to me.

Hello cheese!

When I cut out dairy I cried a little inside (and on the outside) because spinach artichoke dip is full of luscious cream cheese with some uber flavorful Parm action too.

These days you can whip up a vegan version of darn near anything so hello vegan spinach artichoke melts!

Obviously I really wanted this exciting mixture smooshed between two slices of toasty golden brown bread.

(Gooey grilled cheeses are missed over here as well. RIP. Tear. Smeared mascara. Ugly Cry. Get the chocolate ready. Don’t expect a snap reply anytime soon.)

All you have to do is combine gently cooked baby spinach, magical vegan cream cheese, vegan Parmesan, fresh lemon juice and zest, roughly chopped canned artichoke hearts, fresh Italian parsley, black pepper, ground nutmeg, and cayenne pepper for a little kick!

Sandwich the mixture between two slices of your favorite whole grain bread (use gluten-free if you want!), lightly coat the outside of your slices with vegan mayo, then cook in a nonstick skillet until toasty, dark golden brown, and hot.

Do a little happy dance then sink your teeth into that bad boy and shed a few tears of joy–happy crying is definitely acceptable in my kitchen.

P.S. Depending on the size of your bread slices (and how much filling you want to cram on there), you might have a little bit of the spinach artichoke mixture left over… if so, eat it with a spoon duh.

P.P.S. A roasted garlic clove–or two–would be a tasty addition if you’re all about garlic and don’t mind having lovely garlic breath (or want to scare away a suitor who can’t take a hint). Or, fold in a chopped up juicy sun-dried tomato for some extra flavor action minus the garlic breath.

P.P.P.S. My sandwich was comprised of GO VEGGIE vegan cream cheese and Parmesan, plus Follow Your Heart vegan mayo. There are other brands out there, those are just what I had on hand at the time. Not a vegan individual? Use real deal cream cheese, Parm, and mayo, plus maybe some extra Parm. You do you.

P.P.P.P.S. You MUST squeeze alllll the moisture out of the artichoke hearts and spinach unless you want a sad soggy sandwich. A couple paper towels should do the trick.
