Ha ha whew.

As I was uploading the pics for this recipe onto my computer, I was like “dang those raspberries sure look plump and pretty!”

Sigh.

That’s flippin’ watermelon you dufus!

Watermelon that you (you as in me) literally consumed 5.4 hours ago.

How embarrassing!

I think I may have lost a few braincells due to lack of stimuli/stimulation/you-know-what-I-mean during quarantine…

Yeah let’s go with that.

Anywho.

This isn’t much of a recipe, it’s more of an idea for another way to enjoy watermelon!

Since it is still summer, after all.

So as you all know, watermelon is sweet and juicy (or at least it should be).

And salt brings out sweetness.

However, I didn’t really want to just dump salt on my watermelon.

I was aiming to add a nice crunchy, buttery factor in the form of nuts.

So of course I went with delectable roasted macadamia nuts for a real treat.

Drool.

A hit of fresh lemon juice adds a welcome hint of zesty brightness that will balance the luxury of macadamias.

What. A. Combo.

I think it’s time to serve up…

P.S. The lemon juice isn’t really completely necessary, since the succulent melon and mouth-watering macadamias win the couple goals award. So yes lemon is indeed the third wheel, but hey, she’s more than welcome to join the partaay.

P.P.S. If you don’t have a melon baller, feel free to just cube up your melon. We don’t shape discriminate.

P.P.P.S. Be sure to add the nuts right before consuming to avoid the dreaded sog factor. Soggy nuts = adios muchachos.

Watermelon with Macadamia Nuts

Ingredients
  

  • 2 heaping cups watermelon balls (I used a melon baller, cubed melon is fine)
  • 2 teaspoons fresh lemon juice (optional)
  • 3 tablespoons chopped roasted salted macadamia nuts

Instructions
 

  • Gently fold the watermelon with the lemon juice, if using.
  • Top with macadamia nuts right before serving.
