I love me a good sandwich.

First of all breaddd.

Wholegrain tender, flavorful goodness is enough to get me excited.

Stack tasty ingredients between two slices of the stuff and I’m content.

This sandwich is super simple and more of an idea than a recipe really.

I grew up eating real deal BLTs so I wanted to make something similar but healthier and vegan friendly… plus more satisfying.

Why settle?

You can make your own meatless “bacon” but I’m often a fan of shortcuts and am perfectly fine with slapping store-bought protein on my sandwich.

All you have to do is spread vegan mayo on two slices of wholegrain bread, then load her up with creamy avocado, a generous amount of tempeh bacon (I like Lightlife Smokey Tempeh strips), thick slices of juicy vine tomato, crisp romaine hearts (mixed greens if you like), plus freshly cracked black pepper and sea salt to taste!

Sink your teeth into that.

P.S. Toast your bread if you’re feeling extra krispy. I like toasting up just one side in a skillet, mayo side down.

P.P.S. Panfried Smart Bacon works as well! You need to cook that stuff but the Smokey Tempeh Strips are tasty hot or cold. The Smart Bacon is crispier while the tempeh is a little heartier… you choose!

P.P.P.S. How sexy is the acronym BLAT?? hahaha.. ahhh. And I didn’t think anyone would have the slightest idea what TLAT meant so here we are.

Ingredients
  

  • 2 slices whole grain bread (I use Dave's Killer Bread, use gluten-free if you wish)
  • 1 tablespoon vegan mayo (I use Vegenaise), or enough to lightly coat both slices of bread
  • 1/2 medium avocado, sliced
  • 4 strips tempeh bacon (I use Lightlife Smokey Tempeh Strips—Smart Bacon works too)
  • 3 thick slices vine tomato
  • 2 leaves romaine hearts, or enough to cover sandwich
  • Pink sea salt, to taste
  • Fresh cracked black pepper, to taste

Instructions
 

  • *Optional* Toast bread.
  • Lightly coat both slices of bread (one side) with vegan mayo.
  • Arrange the avocado slices on one slice of bread, mayo side up.
  • *Optional* Heat the tempeh strips in a nonstick skillet over medium heat until hot and lightly crispy on both sides. If using Smart Bacon, lightly fry in olive oil until crispy. I do not recommend using cold Smart Bacon.
  • Slice the tempeh strips in half (to shorten), then cover the avocado with the strips, overlapping the tempeh if necessary.
  • Top the tempeh with the tomato slices, then season with salt and pepper to taste.
  • Cover the seasoned tomatoes with lettuce, then complete your sandwich with the top slice of bread, mayo side down, of course.
